Mussel Omelette

So I made mussels with a green curry broth the other night but I couldn’t eat a whole 2lbs of mussels by myself. What to do with leftover mussels? Have you ever had an oyster omelette? I decided to make a mussel omelette. I whisked 2 eggs and added some of the green curry broth for extra flavors. Seasoned the eggs mixture. In a hot pan add oil and add the mussels. Cooked them for a minute and poured in the eggs. I flipped it, or tried to, once the bottom was set. Once I flipped it, I turned off the heat. I didn’t want to over cook the thing. I ate it over rice with a nice squirt of sriracha.

Also I added some frozen peas just for the heck of it.

Mussels with green curry broth

I should really eat more fish but mussels are so much easier to cook, not to mention way cheaper. This time I made it even simpler. My usual way of cooking is oil, garlic, onion, add mussels and hit it with chicken stock. Last month I had made a jar of green curry sauce by combining green curry paste, soy sauce and palm sugar. I love making ready-to-use sauces, great for cooking and marinating.

Get a pan hot, add oil and add mussels. Stir. Pour about 3/4 cup of the green curry sauce and about the same amount of liquid (I used water). Stir. Cover the pan and cook for 3 minutes. Check mussels after 3 minutes, cover back up and cook longer if there are any that aren’t open. Scoop the mussels out and leave the broth in the pan. On high flames, add a big tablespoon or 2 of creme fraiche and some chopped scallions. Stir to melt the creme fraiche. Taste it. Add more curry sauce if it’s too weak. Let the sauce reduce a bit. When done, pour sauce over mussels and sprinkle some chopped scallions. Serve with toasty bread.

Steak frites

Long time ago (2010) my friends and I started a steak frites club where we go to restaurants and eat…..steak frites. The last time we did this (and also our first time) was at Moutarde in Park Slope. Well yes it took us till 2012 to have our 2nd meating (definitely my fault) and thanks to Corrine for scoring a table at Steak Frites during Restaurant Week.

Few months ago a friend had suggested getting dinner at Steak Frites but when I told her about reading mixed reviews we ended up going somewhere else. So I found myself having not too high expectations when I agreed to have dinner there for our steak frites club. But if you’re going to have a steak frites club, eventually you’ll have to go to Steak Frites.

Pasta with mussels & Mike's Hot Honey
I think people should eat more mussels. Well I mean people should eat and COOK more mussels at home. They’re healthy, tasty, cheap and mighty fast to cook. I got two pounds of P.E.I. mussels for $7 at my local seafood shop. I say two pounds is just barely enough for three people and you can eat it as is with some crusty bread or throw in some pasta with a sprinkle of basil. Most recipe I have seen uses white wine but definitely try and experiment with other types of liquid like coconut milk or Pad Thai sauce or any sort of broth.

Mussels with white wine & basil oil broth
So my next Jamie Oliver recipe, I wanted a seafood dish. I narrowed it down to 2 dishes, one was a tomato-y pasta with canned tuna and the second was a spaghetti with mussels dish. Both Steph and Mo voted for the mussels dish, so mussels it is.

Why are mussels so cheap? They’re usually $2-$3 per pound and I bought 2.5lbs of it. Though I should’ve bought the extra half pound because there were few dead ones in the pile.

This whole dish took about 25mins to prep and to cook. While it was fairly easy and straightforward to cook I wasn’t too sure of the end product. It’s hard to know if I cooked it right or not if I haven’t tasted it before. I guess it only matters if the dish was good or not. Well I thought the dish was just alright, it was kind of bland and I was heavy handed with the pepper, whoops. I just didn’t taste any basil or any flavors from the basil oil broth. Overall this was okay.
